Make Healthy Snacks Part of Your Healing

There are many different aspects to healing and one of them is healthy eating. I hope you are having a great start to 2019. I know many made resolutions or set intentions that included healthier eating, if not dieting.

Having something that is quick and stops the sweet cravings is crucial to your success.

I was introduced to these Cacao – not Cocoa, Pistachio Energy Bites and even my grand kids love them and actually want to eat them.

I hope they help you with your sweet tooth but they also help keep you energized and your body in the alkaline state which is always a plus. Give them a try. They are easy to make and will really help keep you on track.

You get a little sweetness from the dates, but aside from that they are very alkaline with the cacao, pistachios, almond meal, coconut oil, chia seeds and almonds. You are getting healthy fats, protein, fiber and antioxidants and the cacao gives you the chocolate you crave.

INGREDIENTS

4 Pitted Medjool Dates (I get them at Costco) 1/4 C. Almonds 1 C. Almond Flour 1/3 C. Pistachios
1/2 C. Shredded Coconut
1/3 C. Coconut Oil
1/3 C. Cacao powder
1/4 C. Almonds
1 Tbsp Chia Seeds

Instructions

Step 1: Let the dates sit out for at least an hour to soften. Soak the almonds for at least 4 hours, unless you’re using a food processor such as a Vitamix, if so, don’t soak them.

Step 2: Blend the dates, almond meal, almonds, half of the pistachios, shredded coconut, coconut oil, cacao and chia together. Let sit for 5 minutes to allow the chia seeds to soften and expand.

Step 3: Roll the mixture into 12 balls. Set aside. Crush the remaining pistachios and then roll the balls in the crushed pistachios to coat them.
